The Cradle of the Kingdom’s Saffron


It is not an ordinary spice, but rather the red gold of Morocco which has acquired world fame, it is the famous Saffron of Taliouine, a real treasure cultivated in the Moroccan High Atlas for centuries.

Morocco is the only African country that produces organic saffron of a higher quality than that of Iranian Saffron, the world's leading producer.

The Moroccan Saffron is distinguished by its beautiful dark red colour, its strong smell and its unequalled flavour.

The saffron comes from the flower of Crocus sativus of the iridaceae family.

It produces three long red stigmas and yellow stamens. When dried, these stigmas are saffron.

The picking of saffron is done daily by hand, it takes place between mid-October and mid-November and is done over a period of two to three hours, at the right time of the day, so that the stigmas are not wilted by the sun.

These have to be removed very quickly to avoid crushing of the flowers.
