Sardine balls


Ingredients :

  • 1 kilo of large sardines.
  • 1 slice of stale bread, crumbed.
  • 1 egg.
  • 1 small bunch of basil.
  • 1 sprig of thyme.
  • A few fresh mint leaves.
  • 1 tsp cumin.
  • 1 small can of tomato puree.
  • Oil for frying.
  • A cube of fish stock.
  • Salt and pepper.

Preparation :

Dip the crumbs in milk and drain. Remove the heads of the fish and the backbone. Finely chop the fish and make balls with the fish, the crumbs, beaten egg, salt, pepper, cumin. Roll the balls in some flour, then put them in a pan in very hot oil. Sear them on all sides to seal.

In a saucepan, pour a glass of water, add the stock cube, the tomato puree and the herbs and simmer for 5 minutes. Place the meatballs in this sauce, and simmer for about 15 minutes more.

Serve hot.
